It is still technically the 1st week of Lent so we will call this week 1st Week of Lent Part 2. How did everyone’s meals go last week? Everyone posted such great ideas! I hope it gave everyone a lot of good ideas to try over the next few weeks. I am going to use the same code each week. I tested it out and it let me add several links using my same email address. So if you posted a meal last week and want to again it should work. If you have any issues just leave a comment and I will change the code.
This week I am posting several of the recipes that we made last week! Did anyone eat out last week? We had a light lunch at Red Lobster on Friday. This is my favorite time of year to go to Red Lobster because they have the Lobster Bisque soup. Yummy! The #CathSorority girls and I were having a big discussion on twitter last week about Wendy’s. I really wish Wendy’s would just say, “It’s LENT go to Wendy’s for their fish sandwich.” instead they go in this round-about way and say “It’s that time of year again when seafood lovers are back and eating Wendy’s fish sandwiches.” In my opinion “Seafood Season” is in the summer but that is just me. *Off Soapbox*
Here are the meals we made last week:
Ingredients:
12 oz Jumbo Shells
2 Eggs
30 oz of Ricotta Cheese
2 Cups (8 oz) shredded Mozzarella cheese
1 -1/2 cup grated Parmesan cheese, divided
1/2 cup chopped fresh parsley or 2 tbsp dried parsley
1 tbsp dried basil
1 tsp salt
3 cups spaghetti sauce (we used jars of Bertelli that were BOGO last week)
DIRECTIONS:
- Cook Jumbo Shells for 15 minutes
- Drain, cover and set aside
- In medium bowl beat eggs lightly; stir in Ricotta, Mozzarella, 3/4 cup Parmesan, parsley, basil, and salt.
- Spoon about 1 TBSP of cheese mixture into each shell
- Arrange filled shells in 13×9-inch baking dish; top with spaghetti sauce
- Sprinkle with remaining Parmesan.
- Bake in 350 degree oven 25-30 minutes or until heated through. (I usually cover with aluminum foil so tops don’t get too crispy)
On Friday for dinner I made Simple Egg Salad. This is probably the easiest recipe on EARTH! I didn’t even put the mustard they ask in. I did add a little bit of salt. My sister likes to put celery in hers but I don’t I’m a plain Jane recipe girl:

Unfortunately my pizza didn’t look that good. That was the closest Pizza that looked like the pizza I had that I could find on Pinterest. That is all the recipes for this week. I was looking for Monday linkups to join with my menu plan and ran across yours. I can not link up since I don’t give up meat for lent. I am not catholic and wonder if everyone gives up meat for lent. We choose something to give up. This would also be a great menu for Vegetarians. That is fine. Catholics and other religions don’t necessarily give up meat for lent but we don’t eat meat on Ash Wednesday and all Fridays during Lent to remember Jesus’ suffering. There are some people that give up meat for all of lent but I don’t do that 🙂

Oh those stuffed shells look divine!!!
Another great meal plan I learned. I’ve been waiting for this one, anyway I was once taste a Egg salad a month ago and it is truly delicious.

I made some of those shells a few months ago when I found ricotta cheese for a $1 per container. They freeze wonderfully for future meals too. I am not participating in lent, but thought I would link up a yummy vegetarian recipe that I love.
I haven’t made stuffed shells in forever, and yours look great. I might have to get that back on my menu rotation soon!
