I’ve been in Experiment mode the last few weeks. Last week I FINALLY made the Lasagna Cups I saw on pinterest. Yes I know I’ve talked about them a MILLION times but I FINALLY MADE THEM and they came out REALLY GOOD! I wasn’t sure if they would be enough so I had made some other food to go with them but they were SOOO FILLING I couldn’t eat anything else! I’m hoping to make these when we finally host Dinners for 8 over the summer or in the fall.

In one of my WordPress Facebook groups the designer that runs the group several months ago designed a food blog and shared with the group the new design since she had never done a food blog before. I fell in LOVE with this blog. Her recipes are so easy and fun! One of the recipes she posted was a P.F. CHANGS Lettuce Wraps [Copy Cat] Recipe. I immediately knew I had to try it because I LOVE P.F. CHANGS lettuce wraps (which is surprising because I’m not a big healthy/salad person) but P.F. Changs is a tad on the expensive side and it’s about 40 minutes away. This weekend I will be trying it and I’ll be sure to let you know how it goes.

Work is going well. I am still trying to figure out how to balance working, the blog, and life duties. I’m doing better though! Today they told me they want me full-time permanently until at least July once we get the database updated and then we’ll see from there. Basically the President doesn’t think they have enough work for all these people (but trust me they do).
I have a slight confession. I am OBSESSED with following celebrities I watch on TV on twitter. I think it just helps me realize that they are real people that get sick, have car problems, and eat just like everyone else.
Since I started working and have income I have decided that in 2013 I want to go to Blissdom! That just seems like the coolest conference and not as intimidating as BlogHer. I’m also hoping by then I will have figured out “what kind of blogger I want to be.” That kind of makes me feel like the age old “What do you want to be when you grow up?” question. I really wanted to go to The Savvy Blogging Summit in October which would have been doable since it’s in Atlanta and I could drive but it sold out before Christmas. Since we aren’t even half way through 2012 I have plenty of time to figure this all out (but I’m a planner and this is how my brain works)!
To be honest I REALLY wanted to go to Behold2013 but it would cost me WAY too much money for a 1 day conference. I’m really struggling with finding catholic friends my age to grow in community with. I have some wonderful friends in #CathSorority online but it’s just not the same as the catholic student center community I belonged to in college. Ever since I graduated from college I have been in this “faith fog” after I lost the huge community I found during my college years.
In happier news I did find out that there is a women’s conference in my diocese every other year. I found out because there is a mens conference I was trying to figure out a way to con myself into because Father Leo from Grace Before Meals is speaking and I LOVE him!! IF you have never seen or heard of him here is a video overview of his show:
I love how passionate he is about his faith and food! He was even on The Food Network! When I asked this general young adult group on facebook one girl told me about the women’s conference. I plan on trying to go to that conference next year.

The mini lasagnas are very good made with wonton wrappers, and super easy! I will have to try the lettuce wraps recipe, thanks!
I have a recipe for the lasagna’s made with wonton wrappers also. I should try those sometime!
